Holwood Jack's Flapjacks

Our younger son Jack loves these flapjacks, which are so simple to make and bake – 25 minutes from start to finish. Enjoy them warm with a cuppa or pack them into lunch boxes; when cold they turn deliciously crunchy and make a sustaining snack with a healthy dose of fibre.

 

6oz (175g) caster sugar

6oz (175g) butter

1 dessertspoon golden syrup

1 tsp baking powder

8oz (225g) porridge oats

 

  1. In a large, heavy bottomed pan over a very low heat, melt the sugar, butter and syrup
  2. Stir in the baking powder and oats until thoroughly mixed
  3. Tip into a non-stick baking tray (approx 33cm x 23cm) and level off with the back of a spoon
  4. Bake on 180oC (fan) for 15 - 20 minutes until golden
  5. Remove from oven and cut into squares while still warm, but leave in the tin until cool
